Tomato and Onion Salad
Wow, I made this this past weekend and both my Mom and Sister raved about it..I liked it too
I don't really have a recipe but this is how I made it: 2 ripe small tomatoes 1/2 small red onion salt / pepper fresh Basil (handful) fresh Italian/Flat Parsely (handful) soft goat cheese (I used probably 2 oz or more) balsamic vinegar 1 - 2 tblsp olive oil 2 - 4 tblsp chop tomatoes in bite size peices, halve the onion then quarter it, slice thin, toss together. add salt / pepper to taste, chop coarsely a small handful of basil and parsely add to bowl toss again. break the goat cheese into bite size peices and toss. I left this overnight only 'cause I made it early to take to the lake...I thought that after I added the cheese it might melt into the the tomato/onion mix....it worked!It made the juices nice and creamy. before serving I added the balsamic vinegar and the oil tossed and voila. It was really good I am making it again tonight for my dinner. Enjoy pbp

basil sweatted shallots or relly sweet onion fresh ground pepper and salt to taste tomaotes celery bell pepper or hot pepper and blue cheese dresssing t's and cilantro and kosher salami blt' salad with croutons t's and bacon canadian bacon or taylor ham home made chili breakkfast a warm tomatoe and salt pepper maybe jsut suck it out better than a v8 yeah i love real tomatoes |

unfortunately , I'm such a bad cook , can't make anything that has more than 3 ingredients it's my rule and I'm sticking with it |

My fave is thinly sliced cukes, plum tomatoes, green onions, mushrooms and green peppers. I make a marinade of tarragon vinegar, olive oil, fresh pepper and a dash of sugar. I mix the dressing, pour over veggies and toss it in fridge. Its like 1 tbl of herb vinegar, 1 tbl of oil, and 1/4 tsp of sugar for a quart? of veggies. After it marinates and I toss, I taste. If it's really good with spicy onions, I leave it alone. Otherwise, I might add fresh cracked pepper. Sometimes I add celery.
I'm sparse on dressings, because I think they ruin a salad. YMMV. |
