Chicken Batter
We just bought a deep fryer. I've never wanted one but hubby kept insisting so I gave in. Anyways, can you just use pancake batter and add some spices to it? Or, do I have to do something special? ....and I hope easy.

I would think that pancake batter would be to sweet don't you think? I don't deep fire so i guess i'm not much help. still i think i would look up chicken recipies or batters see if there IS a difference.

It's really easy to make your own too, and can be made with just about anything in your cupboard!
I use special K. or Cheerios (or any non sweet cereal), or crackers, or croutons. and add some flour and spices like garlic, oregano, cajun or any spice you like. Put the cereal, or crackers, of croutons in the blender and blend until the are crumbs. add to a shallow bowl with flour and spice and mix together. in another shallow bowl add 2 to 3 eggs and mix them well. put meat through the egg wash then through your dry mix then deep fry! I also use the above for baking my meats in the oven. (much healthier )

Very similar to what I do for baking chicken and pork chops.
I start with flour (put it in a plastic bag and shake the meat until lightly coated), and then dunk into buttermilk in a shallow bowl, and then into another bag with the crumb/spice mixture, shake until coated. The buttermilk makes the coating tangy, it's lowfat and it helps to tenderize the meat and keep it moist.
