Dinners to keep veggies and meat eaters happy?

I cook.. like for real. Not macncheeese.. but real cooking.

Just curious of what things I could make that are meat free but not boring. My mom keeps complaining about my meals because they don't have any meat in them. Frankly, I think she is rather rude for complaining about my cooking when most kids my age can not even turn on a stove.

Anyways. Um. I mostly stick to pasta. Specifically stuffed shells. So, what would you guys recommend that's meat free but not something obvious like tofu burgers. I'm tired of my cooking being overlooked in the family just because I prefer not to fry up dead animal parts in it

Maybe a casserole or stir fry? I'm very picky myself I just need something new to make that I can share with the family.

How about a Mousaka or a vegetarian Lasagnia? If you include Portobello mushrooms in it, it will add a texture that some say is slightly similar to meat.

Hi kathryn,

My daughter is semi-vegetarian (depends on that time on Month) Meat is seems increases her pain.

Soooo I usually make these: (I sometimes make alot & freeze them for her)
Vegetarian Baked peppers

I have a whack of recipes from that site (you can also browse there)

or veggie Quesadillas

A veggie lasagna might work.

I like the recipe for the stuffed peppers. Would it work with the green peppers? My family lovesssss stuffed peppers but they always use the green ones.

I deff. need to look for a casserole. LOL I dunno why. My mom makes these chicken noodle casseroles from the recipe on Campbells website and it looks yummy. I want to make one without chicken and no chicken broth and lots of veggies.

most definately will work with green peppers (i usually make them with whatever i have)

Is tuna on the no-eat list? if not

a tuna casserole is also yummy.

I don't eat fish either. No animals at all. Or anything made directly from animals like ummm gelatin or weird stuffs like that. Dairy is okay with me though Organic dairy mostly.

I think I might just alter the noodle casserole I've seen her make to take the meat out and add more veggies and use cream of mushroom insteada cream of chicken. Probably will work.
