Dinners to keep veggies and meat eaters happy?

I cook.. like for real. Not macncheeese.. but real cooking.

Just curious of what things I could make that are meat free but not boring. My mom keeps complaining about my meals because they don't have any meat in them. Frankly, I think she is rather rude for complaining about my cooking when most kids my age can not even turn on a stove.

Anyways. Um. I mostly stick to pasta. Specifically stuffed shells. So, what would you guys recommend that's meat free but not something obvious like tofu burgers. I'm tired of my cooking being overlooked in the family just because I prefer not to fry up dead animal parts in it

Maybe a casserole or stir fry? I'm very picky myself I just need something new to make that I can share with the family.

How about a Mousaka or a vegetarian Lasagnia? If you include Portobello mushrooms in it, it will add a texture that some say is slightly similar to meat.

Hi kathryn,

My daughter is semi-vegetarian (depends on that time on Month) Meat is seems increases her pain.

Soooo I usually make these: (I sometimes make alot & freeze them for her)
Vegetarian Baked peppers

I have a whack of recipes from that site (you can also browse there)

or veggie Quesadillas

A veggie lasagna might work.

I like the recipe for the stuffed peppers. Would it work with the green peppers? My family lovesssss stuffed peppers but they always use the green ones.

I deff. need to look for a casserole. LOL I dunno why. My mom makes these chicken noodle casseroles from the recipe on Campbells website and it looks yummy. I want to make one without chicken and no chicken broth and lots of veggies.

most definately will work with green peppers (i usually make them with whatever i have)

I don't eat fish either. No animals at all. Or anything made directly from animals like ummm gelatin or weird stuffs like that. Dairy is okay with me though Organic dairy mostly.

I think I might just alter the noodle casserole I've seen her make to take the meat out and add more veggies and use cream of mushroom insteada cream of chicken. Probably will work.

i make a chicken caeser pasta casserole

I had made it recently & didnt realize the hubby had eaten the leftover chicken.

I added Broc & carrots & celery & It was yummy & no one realized it didnt have chicken LOL.

Have you ever bought the ground round?

It's looks like hamburg but it's soy. It comes in Asian, regular, Italion, and Mexican. The Mexican is my favorite....heat it up and voila taco or on nacho's.

I make lasagna's, caseroles, spaghetti, everything...and even non vegetarians like it.

I love the ground round!! Made by Yves. Also Tofurkey sausages are very versatile and super high in protein. I've fed them to a number of non-vegetarians and everybody likes them.

The ground round mentioned in the link above is AMAZING in veg. chili.
It's one of the few veggie foods that (when I make it) regularly fool carnivores.

1 can diced tomatoes
1 can tomato sauce
1 can kidney beans - (wash them first)
Chilli powder - the old el-paso package works fine
1/2-3/4 pack of the veggie ground round

Time to prepare - less than 10 min.

Goes GREAT with rice.

There is also veggie ground that looks like meat and has the same texture. I used it instead of ground beef in my spagetti sauce and no one was the wiser. I only told everyone after and all were amazed.

Next I am going to try veggie balls and see how it turns out.

My favourite when I'm entertaining vegetarians is a bean and rice concoction.
1 large can of mixed beans (kidney, garbonzo, navy, etc.) or three small cans of single variety beans (they are already cooked so mix it up according to taste)
2 cups of instant rice
1 cup of vegetable broth
1 cup of tomato sauce
season with your favourites - I like a bit of sage and pepper
combine all in a large frying pan - bring to a boil and then cover and simmer until all the liquid is absorbed - about 10 minutes

you can add tofu chunks if you like
you can add some frozen vegetables if you like

Why can't you make the noodle casserole (using the mushroom soup) and then keep your portion separate and just add the meat to the rest of the casserole to keep your family happy?

That's what I do as well. My daughter and sister are vegitarians, BIL does not eat pork and shellfish (Jewish), mother does not eat red meat, and myself and dad are pretty flexible. Dinners can be tricky but I make things that everyone will be ok with. My sister however really can't even be around meat as we get lectures during the meal so I try to avoid it.

I've been doing that for a while but it makes me feel awkward. Even just around my family. It's usually just my cousin who starts things and is like ohhhh what's wrong with your food where's the MEAT? So I would rather have everyone eat the same thing without it being an obvious veggie meal.

I use THIS as fake ground beef. It's wonderful!

try picking up a vegetarian times magazine they have WONDERFUL and delicious recipes in it you can also look at their website.

I make veg tacos with mock meat DELICIOUS!
