Any recipes for chicken kebabs?

I'm trying to find a simple marinade recipe for chicken kebabs, and it's so hard to find one on the net. Does anybody have one?

how simple?
the simplest i know is just plain ol' italian dressing. works great.

lol It can be more complicated than that, but no ingredients I've never heard of... Like there's one I found with "sumac" in it... I know of a sumac tree, but that's about it. Basically, a recipe where I don't need to run to 10 different stores to find the ingredients...

I have a great one at home so I searched the net and this looks like the one:

3/4 cup soy sauce
1/2 cup brown sugar
2 tbsp garlic powder
1/2 tsp ginger powder

Just marinade the chicken for about 30mins (or however long you can) and put them on the skewer thingy's and on the BBQ!

hehe...

do you like satay? (chicken on a stick street food)

marinade:

8 tbsp soy sauce
2 tbsp rice wine vinegar
2 tbsp sugar
6 tbsp chopped coriander
4 tbsp chopped chives
1 tsp finely chopped chilli

but it does have some non-runofthemill ingredients...

How about this one? I haven't tried thisjust did a search, i was interested )

1/2 cup plain low fat yogurt
2 garlic cloves, finely chopped
1/4 cup onion, finely chopped
1 tsp freshly grated ginger
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cinnamon
1/2 tsp turmeric
2 tbsp fresh lemon juice

Last night I made tandoori chicken kebabs- on naan bread. Bought a tandoori spice envelope at the store (looked like red curry sauce), added yogurt, let marinade, then grill. yum.

What does the yogurt do? I mean what kind of flavory action does it do? I've never used yogurt with meat before..

Do the soya ones come out with a stir-fry-like taste, or is it different on the grill? They look good though.

Does anybody know how to make the Greek-style ones?

hi!
yogurt is for moisture, i think? i'm not sure. it cools down the spice. doesn't really give it a taste, but it sure turns out moist.

for greek, i would just do... wine, lemon juice, olive oil, salt, pepper, oregano. Do you want to make souvlaki?

Ok.. what's the difference between souvlaki and kebabs? Souvlaki is good... Now I'm not sure I even know what kebabs are.

souvlaki is deffinitively of greek origin, kebabs are turkish.
Yogurt is a meat tenderizer. That's why it's so common in the middle east, where they start with tough goat meat. It does also cool the spicc, but when used as a marinade, it's for the former purpose, when used as a dip, it's for the latter.

In the end, I cheated... I got President's Choice Greek Marinade and it was unbelievable. I let them marinate for about 4 hours and they came out tender as hey. The marinade is basically olive oil, lemon juice, garlic and spices.

hey prin, i just bought that one too; used it on salmon two days ago. it was great!
those pc bottles just make it difficult to justify making anything homemade! They are so good.

Sumac is a middle eastern herb/spice. You could find it in middle eastern stores if you want to try it. It's especially good on chicken. It doesnt come from the sumac tree we have here, I haven;t figured out why they have the same name LOL.

The simplest marinade I know for chicken is ground up onions, cardomom seeds, salt and pepper (you can omit the salt if you are on a low-sodium kick like I am). Marinade the chicken in it for as long as you like (overnight in the fridge is fine) then cook it as usual. This works on pieces of chicken as well as chunks on sticks for kebabs.

Simplest way to do tandoori or tikka is buy the spices from the local pakistani store and mix with yogurt and lemon juice, then marinade.

My favourite middle eastern style marinade is lemon juice, olive oil, herbs (oregano, thyme, basil, or italian herb mix... whatever takes your fancy), black pepper, salt (optional). This works on other meats too and if you marinade lamb chops in it for 2 days in the fridge you can cook them right on the BBQ.

Chicken Kabab Recipe:

Ingredients:
  • Skinless boneless chicken - 900gms
  • Fresh lemon juice - 1/4 cup
  • Plain yogurt - 1/4 Cup
  • Garlic cloves, minced - 4 nos.
  • Coriander Powder - 1 1/2 tablespoons
  • Butter, melted - 2 tablespoons (1/4 stick)
  • Ground cumin - 2 teaspoons
  • Ground turmeric - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cayenne - 1/2
  • Ground ginger - 1/8 teaspoon
  • 6to 8inch bamboo skewers, soaked in water 30 minutes - 12 nos.

Method:
Cut chicken breasts into 1 inch pieces.
Mix with lemon juice, and salt in a bowl.
Cover and let stand for 30 minutes.
In a separate bowl combine yogurt, garlic, coriander, cumin, turmeric, and cayenne.
Mix well and add to chicken.
Toss, cover and refrigerate for about 3 hours. Preheat grill.
Tread chicken onto skewers.
Brush with butter and grill for about 6-8 minutes or until done.
Turn frequently while grilling.
