Black Eyed Peas?
Does anyone have any good, simple recipes for black eyed peas? I have about 4 cups of the dried beans, and I would like to cook them up soon. It's a couple days till payday, and I was thinking about making a refried bean type mix, but am not sure how to go about it? Any ideas would be greatly appreciated!

Black-eyed peas : If using dried black-eyed peas, in a large pot cover dried black-eyed peas with water. If not soaking peas first, simmer them for about 3/4 to 1 hour until tender. If pre-soaking for four hours, simmer them for about 30 minutes
