I'm leaning towards it being some kind of a wild rose such as a Gallica/Rugosa type. I have a rose dictionary book whereby this bush closely resembles the Rosa Californica, "Plena." shrub.

Just by looking at the thorns and the colour of the meat on the canes, it looks older than a modern shrub.

Oh hum.....I'm gonna keep guessing.
