A number of factors combined can be causing Gunner's runny stool. Was he dewormed prior to leaving the shelter? Sometimes the medication can cause this. The stress of being relocated to a new environment, even though he's in a wonderful place, can also cause diarhea. And, of course, a sudden change of diet can be another factor. If you're concerned about his food, perhaps you can start a new thread in the "dog and cat food forum." There are many members here who are very knowledgable concerning holistic/high quality food (I'm not one of them, although I've followed their advice successfully).
