Ummm... do we want to get graphic at dinner time? Think capillaries but also think fungi and all the kazillions of microbes which inhabit the rumen. I think it also depends on, in the case of beef tripe whether it's the rumen, reticulum, omasum or abomasum that's used. But I might be wrong.
