I'm gonna take a look at one of the links you mention when I have a day off but...how about keeping it simple for now like ground chicken, liver and giblets, and whole eggs? The eggs will help it stay all together. You can use turkey or beef as well, whatever you choose. For beef, it's much cheaper to buy large cuts, slice it up, and grind it yourself. It's at least 1/2 the price of already ground beef. I have an old hand grinder I could lend you or I can just grind it all up at work for you (much faster). You can add the veggies, any supplements, and herbs when you're ready to feed. It's really quite simple, just an hour or two of preparation and you're set for a month.
