No need to go crazy on the stock, just use a little. I used about a cup of stock. But depending on the amount of soup needed or the size of the broccoli head or numbers of broccoli heads used adjust as it is needed. Keeping in mind the other ingredients will need adjustments too.

1) Add the potato pieces, then add the stock and finally add some water to cover everything. Let it come to a boil and shimmer for about 20-25 minutes. Again keep in mind that each stove is different, don't just walk away for 25 minutes. Check it occasionally and stir it so you can judge and adjust.
2) Using a slotted spoon, scoop up the broccoli stem and potato pieces into a blender with some of the liquid. If you don't have a blender, cut up the stems and potatoes into finer pieces in the beginning and use a potato masher right in the pot.
3) Add the florets back in to the remaining liquid and steam them some more to allow them to cook all the way through.
