This is one of my favorite recipes. They're super easy to make. Frenchy--you could MAKE these--honest.




Pignoli cookies

1/2 cup white sugar
1/2 cup confectioner's sugar
1/4 cup flour
1/8 teaspoon salt
1 (8 oz) can almond paste
2 egg whites
1 jar pignoli nuts
extra confectioner's sugar for dusting the cookies

Sift together sugars, flour and salt. Set aside

In a medium bowl break up paste with a fork.

Add egg whites and beat on medium.

Add flour/sugar mixture on low. Refrigerate 1/2 hour.

Drop on to greased cookie sheets 2" apart. Press pignoli nuts gently onto top of cookies--about 5 or 6 on each-prssing the cookies down gently but not too flat.

Bake at 300 for 20 minutes. Cool on wire rack. Dust with confectioners sugar.

This doesn't make a lot of cookies. Just about 2 cookie sheets. I nearly always double the recipe.
