World's best seafood chowder

Fabulous chowder, even better the 2nd day. My adaptation of the family recipe.

1 Block frozen Halibut (400g)
1 Block frozen Alaskan Pollock(400g)
200g small scallops (optional but recommended)
4-6 slices lean back bacon
1/2 pkg imitation crab (optional but recommended)
3 potatoes (diced)
1 small onion
1 liter Light Cream
1 liter Skim milk
2 tbsp butter
salt & pepper to taste

Add fish & 1 tsp salt to pot & cover with water. Boil until fish flakes easily with a fork.

Add potatoes and cook until water is reduced 1/2 of original qty.

In a separate pan, saute onions & back bacon together until bacon is cooked and onions are golden. Add to pot with fish, stock & potatoes.

Add scallops,sheded imitation crab, cream, butter & milk. Heat to a very low boil and simmer for 30-40 minutes. Add salt & pepper to taste.

Serve with warm pan rolls if possible.
