I do pretty much the same thing as Ceara. I soak the beans overnight, then simmer them in fresh water for about an hour the next morning, drain the liquid but keep a cup or so to put back in with them, add a chopped onion, a bit of molasses, some brown sugar and either some chopped bacon or a ham hock and throw it all in the crock pot for a day. Throughout the day they will get darker brown and tastier. If you use a ham hock, take the meat off it and put back into the beans before serving.
