My favourite when I'm entertaining vegetarians is a bean and rice concoction.
1 large can of mixed beans (kidney, garbonzo, navy, etc.) or three small cans of single variety beans (they are already cooked so mix it up according to taste)
2 cups of instant rice
1 cup of vegetable broth
1 cup of tomato sauce
season with your favourites - I like a bit of sage and pepper
combine all in a large frying pan - bring to a boil and then cover and simmer until all the liquid is absorbed - about 10 minutes
you can add tofu chunks if you like
you can add some frozen vegetables if you like
