For starters, wet food is just simply better for cats than dry. Lots on that here: http://www.catinfo.org/

But the big issue with cats getting fat in the first place has to do with the high amount of starch in dry food, necessary for it to keep the kibble shape. Cats aren't used to dealing with this excessive carb load and any excess gets stored as fat. Canned food usually has fewer carbs and more protein, and it's the amount of protein consumed that tells a cat when it's full. As well, it's less likely that a cat's caretaker will do the bottomless bowl method of feeding canned the way they tend to with dry, reducing the cat's propensity to overeat from boredom.
