You want simple....it doesn't come any simpler than this:
1 lb. ground beef
1/4 cup dry bread crumbs
a little salt + pepper or whatever your preference (I use Spike)
Combine all ingredients and mix well. Shape into balls. Bake at 375 degrees for 15-20 minutes or until browned.
For sweet and sour meatballs:
One recipe Basic Meatballs
2 Tbsp. sugar
1 1/2 Tbsp. cornstarch
1/2 cup water
20 oz. can (2 1/2 cups) pineapple chunks, drained (reserve 1/2 cup syrup)
1/2 cup reserved syrup
3 Tbsp. vinegar
2 Tbsp. soy sauce
1 or 2 green peppers cut into chunks
In large skillet add sugar and cornstarch to browned meatballs. Stir in water, syrup, vinegar and soy sauce. Heat mixture until it boils and thickens, stirring constantly. Add pineapple and green pepper. Simmer covered 15-20 minutes. Serve over rice.
