souvlaki is deffinitively of greek origin, kebabs are turkish.
Yogurt is a meat tenderizer. That's why it's so common in the middle east, where they start with tough goat meat. It does also cool the spicc, but when used as a marinade, it's for the former purpose, when used as a dip, it's for the latter.
