Meatball receipe needed!
Im looking for a fairly simple meatball receipe, something like sweet and sour meatballs.
It's for dinner tonight and we will be having either rice or perrogies and broccoli and cauliflower (left overs from last night!!!) with the meatballs
Anyone have any of their favorites they want to share? My receipe books are all packed away and I dont have a clue where to start looking for them!
My fave: Meatballs
Makes 10 (BIG meatballs, but this keeps them tender inside mmmmm)
3/4 cup fresh breadcrumbs
6 tablespoons whole milk
2 tablespoons plus 3/4 cup extra-virgin olive oil
1 1/2 medium onions, finely chopped
6 cloves garlic, finely chopped
1 1/2 pounds ground beef, preferably chuck
1 1/2 pounds ground pork
3 large whole eggs
3 large egg yolks
3 tablespoons finely chopped fresh flat-leaf parsley
3 tablespoons finely chopped fresh oregano
1 1/2 cups freshly grated Parmesan cheese
Coarse salt and freshly ground pepper
1. Preheat oven to 350°. Place breadcrumbs in a small bowl. Drizzle the milk over and let stand until absorbed.
2. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add the onion and garlic; cook until translucent, about 3 minutes. Set aside.
3. Place the ground meats in a large bowl. Add breadcrumb mixture to meats along with the reserved onion and garlic, whole eggs, yolks, parsley, oregano, and cheese. Season with salt and pepper. Using your hands, mix until just combined. Moisten hands with water, and roll meat mixture into 3-inch meatballs. Place on a baking sheet.
4. Heat 1/4 cup of oil in a large skillet over medium heat. Working in batches, add meatballs, and brown on all sides, about 5 minutes. Finish cooking in sauce, or transfer to a baking sheet fitted with a rack to drain. Bake until cooked through, 12 to 15 minutes.
If you want to try something different try adding nutmeg, shallots, cillantro + hot peppers and other flavouful aromatics.
You want simple....it doesn't come any simpler than this:
1 lb. ground beef
1/4 cup dry bread crumbs
a little salt + pepper or whatever your preference (I use Spike)
Combine all ingredients and mix well. Shape into balls. Bake at 375 degrees for 15-20 minutes or until browned.
For sweet and sour meatballs:
One recipe Basic Meatballs
2 Tbsp. sugar
1 1/2 Tbsp. cornstarch
1/2 cup water
20 oz. can (2 1/2 cups) pineapple chunks, drained (reserve 1/2 cup syrup)
1/2 cup reserved syrup
3 Tbsp. vinegar
2 Tbsp. soy sauce
1 or 2 green peppers cut into chunks
In large skillet add sugar and cornstarch to browned meatballs. Stir in water, syrup, vinegar and soy sauce. Heat mixture until it boils and thickens, stirring constantly. Add pineapple and green pepper. Simmer covered 15-20 minutes. Serve over rice.
I've posted this before, so here it is again:
Sweet and Sour Meatballs
1 Lb. ground beef (made into meatballs with seasoning etc.)
10 oz. jar of grape jelly or jam
12 oz bottle of chili sauce
Heat the grape jelly and chili sauce in the crock pot. Once warm and mixed together, put meatballs in. Cook on low and is ready when you get home from work!
I use them for both appetizers and for dinner. When I make them for dinner, I usually serve it over rice. The combo of grape jelly and chili sauce sounds gross, but it totally rocks! If you are running short on time and need these done faster, you can brown the meatballs on a cookie sheet in the oven.
**You can easily double this for a family. It's very easy and very good.

Even simpler . . . Costco, big bag in the freezer case. Use with any of the sauces suggested above.
I'm with you glasslass...the Cosco meatballs are great..I get sometimes 3 meals out of them depending on what I am using them for.
Or If you have an M&M Meat Shop in your area (Not sure where abouts you are located since I am a newbie) they have AWESOME meat balls!!! And they are already precooked.. so good!
