Crock Pot Chili Anyone
I am looking for a simple, yet tasty [B]crockpot chili recipe[/B]. I know I can google it and find a tonne but I am interested to know if anyone here has one.
In fact I would be interested in any tried and true crock pot recipes. I work 5 days a week till 4pm but don't get home till nearly 5pm. Most days I just hate the thought of having to cook once I am home. My boyfriend has even longer days and it would be nice to just have something that is ready for us so we can sit down and enjoy our few hours of evening time together. Anyways anything you can pass along would be great, thanks so much!!! :thumbs up
I don't eat chili, so I don't make it either, but here's one that I've used a lot. In fact I'm making it tomorrow!
Sweet and Sour Meatballs
1 Lb. ground beef (made into meatballs with seasoning etc.)
10 oz. jar of grape jelly or jam
12 oz bottle of chili sauce
Heat the grape jelly and chili sauce in the crock pot. Once warm and mixed together, put meatballs in. Cook on low and is ready when you get home from work!
I use them for both appetizers and for dinner. When I make them for dinner, I usually serve it over rice. The combo of grape jelly and chili sauce sounds gross, but it totally rocks! If you are running short on time and need these done faster, you can brown the meatballs on a cookie sheet in the oven.

I just put this together for us for dinner tonight. The amounts in this particular recipe is plenty for two people, but you may want to double up for a family. Also, if you are using the amounts above, use a smaller crock pot. I have two crock pots -- a 3 quart and a 6 quart. I use the 3 quart for the above recipe and the 6 quart when I double it up. Also, with my meatballs I just use bread crumbs for them and I personally brown them for a few minutes, just so they hold together better. I've never been crazy about dropping raw meatballs into any sauce to cook because they usually fall apart for me when I try to stir them.
This is my dad's recipe... it's so yummy.
1 1/2 lbs ground beef
1 cup chopped onion
1 cup chopped green pepper
1 28 oz can whole tomatoes undrained
1 16oz can kidney beans undrained
1 can pork & beans (or a can of mixed beans - I use a "6 Bean Medley")
1/2 tbsp chili powder (or more if you like it spicy)
1 tsp ground cumin
1 tsp salt
1/2 tsp pepper
1/2 can tomatoe paste
Brown beef with onion and pepper.
add all ingredients to slow cooker, stir to blend.
Cook in slow cooker on medium heat.
I have a book called "Fix-it and Forget-it Cookbook" it has over 800 tried, tested, and true slow cooker recipes.
One of my faves:
Frances' Hearty Vegetable Soup
1 lb round steak, cut into 1/2 inche pieces
14 1/2 oz can diced tomatoes
3 cups water
2 potatoes, peeled and cubed
2 onions, sliced
3 celery ribs, sliced
2 carrots, sliced
3 beef bouillon cubes
1/2 tsp dried basil
1/2 tsp dried oregano
1 tsp salt
1/4 tsp pepper
1 1/2 cups frozen mixed vegetables or your choice of frozen vegetables
1. Combine first 3 ingredients in slow cooker.
2. Cover. Cook on High 6 hours.
3. Add remaining ingredients. Cover and cook on High 2 hours more, or until meat and vegetables are tenter.
(I also add a lb of ground beef... just put it in with the beef cubes.)
(I also add all the ingredients at the beginning as I only have about an hour at home before I eat and the potatoes and carrots do take more than two hours to cook).
Mmmmmm now I'm craving a nice hearty meal!

I've made just about everything that I can try in the slow cooker, how easy is it to put in in either the night before or that am before you leave for work. You come home to a wonderful smell and very little left to be done. I do most of my roasts, whole chickens, turkey halves, soups etc... there are a ton of cook books out there just for slow cookers. I use mine all year as it doesn't heat up the house like the oven in the summer, and it hardly gets put away in the colder months, I LOVE my slow cooker:love:
ok, here's a rib recipe:
Cut side ribs into pieces (3 or 4 ribs together). Season (salt, pepper, garlic pdr)
Chop onion rings and layer on bottom of slow cooker. Then put in ribs. Then add one bottle of bbq sauce ( I like honey garlic Diana's). That's it! On low, after 7 hours or so, you'll have fall off the bone tender ribs. Serve over rice. If you need it a bit faster, put it on high for one hour first then turn to low, they'll be ready in about 5 hours.

they are great... ribs are usually such a pain to make.
