Make ahead dinners to freeze
 
Well it's getting close to that time of year where we leave for the island. Since the first week anyway is generaly nutts(well the first two months are). I decided to make a few dinners ahead so we don't have to think about what to do for dinner.

So far I've got lasagna, sauce is made and in the freezer so we just need to make the noodles and through it all together. I thought unthawing the sauce just to freeze it again might be a bad thing?

Chili will be another but I need a third meal idea. I don't want another beef dish and hubby is super picky and allergic to mushrooms. Also the bosses are on a low carb diet, so if possilbe something that doesn't have a lot of carbs.

I thought about soup but hubby's not a homemade soup fan and most have rice or pasta in them. Other than veggie soups but that would be a third tomato dish. I know the bosses don't care, just the fact we don't have to think about dinner for at least the first three days is good enough.

I have looked at several recipe sites but just can't decide so I thought if any of you had an idea or recipe it might make my decision easier. Not that I am looking for an easy out but I am just not very creative when it comes to cooking, I can cook as long as I have something to follow.

Dustybird since you already have the sauce maybe you could make some meatballs and grab a bag of buns..walla meatball subs! nice and easy and easy to clean up..sauce is already made...buns easy to buy?? you could whip up a salad and your off!

Or you could freeze a tray of scallop potatos and throw something on the bbq to go with it? (oh maybe potatos arent a good idea if people are dieting??)

Frozen tray of cannelonni? or manicotti? or how about breakfast for supper? I like doping that since I cant always make breakfast at breakfast time!

Where is the island by the way?

OMG I am hungry now! :D

Hi

I like to have frozen veggies and meat cut into portions
on hand at all times. I have fibromyalgia and need quick
easy to fix dinners at times.

So, start with frozen carrots( easy to cut this way),
green peppers, broccoli etc......add onion, garlic and cooked
rice and make a quick stir fry. Any meat will do ( can leave
meat out). Most will cut easy if frozen in slices.

30 mins or less is my goal....lol.....
