Tortellini and Spinach soup

Tortellini and Spinach Soup

Ingredients:

1/2 of a large white sweet onion
2 fresh garlic cloves
3 tbs virgin olive oil
3 cartons ready made chicken broth ( I used the Pacific organic from Costco)
2 large cans of plumb tomatoes (use knife or spoon to break them up in the can)
Sea salt/Kosher, to taste
Fresh ground cracked pepper, to taste
1 pkg deli fresh tortellini (either cheese or beef)
2-3 big handfulls of fresh ready to eat baby spinach (you can more if you really like spinach, I use over half a bag for each pot.)

Directions:
mince onion and garlic cloves, sautee in olive oil until just transparent,do not drain.
Put sauteed onion,garlic, from pan straight into a big pot.
Add the three cartons of Chicken broth, stir and simmer over medium heat.
Add the 2 cans of plumb tomatoes, straight from can to pot.
Add the Kosher salt and pepper (to taste) and bring to a rolling boil.
Add Tortellini, a handful at a time, stirring constantly, make sure tortellini's are not stuck together when they go into the pot.
Boil and stir for 8-10 minutes.
Reduce heat, and let simmer for 5 minutes.
Drop Spinach in on top of soup, cover and wait for spinach to wilt slightly, then gently stir the spinach into the soup. If you add more spinach repeat, wilt and gently stir.
Once you have all the spinach you want in the soup, let it simmer over medium heat for 5 more minutes, then serve.
I add fresh grated Parmesan cheese on top, use only a little.
Serve with fresh French bread or Garlic Toast.

This is so easy and yummy, it is a regular on our weekly menu at our house.
Sometimes I serve it with a bacon and cheese quiche, or with a side salad.
