Anyone got a good Risotton recipe??
 
I'm looking for a risotto recipe that would go with steak. I was thinking maybe something with spinach (I have lots of spinach right now)....anyone?

Are you using real risotto as in arborio rice? If so, then you cook the rice according to pkg directions but add the yellow part of the lemon rind grated during cooking. When it is done, you put in 1/4 cup of parmesan cheese and the juice of your lemon plus your spinach chopped. Stir well, cover and let stand for a few minutes. You only need the two egg yolks if you are cheating and using regular rice such as uncle ben's because it won't give you the creamy risotto look and feel.

what is risotto?? I've never heard of it! :confused:

Risotto is an Italian dish. Made from aborio rice. aborio rice has more starch in it, so the rice is creamy in the end. You don't cook it like normal rice, but you first pan fry it in olive oil, then slowly add 1/2 cup of liquid, and stir it until the rice absorbs it, then add another 1/2 liquid and stir/cook till absorbed. You keep doing that until the rice is the right tenderness. Traditionally, most risotto's have cheese added at the end. You just add you flavours at the end!
