Broccoli and Cheese soup

This was a broccoli and cheese soup that I made a couple of days ago. It is fairly simple, no canned soup or cream used. I don't use any precise measurements, I just try to keep the proportions the same each time I cook. For example I ran out of small sized onions and only had a medium one left. So, I used half of it. I also prefer to use a nice cheese, in this case a piece of cheddar that I grated. You can use any cheese that you like, keeping in mind that something like mozzarella will be very stringy.

1) Just the basic ingredients laid out.
2) I cut of the florets from the stem of the broccoli.
3) Only half the onion is used in this case, the other half gets put into a container in the fridge (I will use it for something else).

Some people will say to only use the florets of the broccoli but I think that is a waste. I use the whole head of the broccoli, but I keep the stem and florets separated since they will cook differently. Also, I keep the florets aside for the colour and texture.

1) A small potato that has been peeled and cut into fairly big chunks, since I am not using it right away I am keeping it covered with water to keep it from turning grey.
2) Normally I don't use any cream in my recipe to keep things simple and healthy but since this is a cheese soup I did use a little bit of skin milk. Not the whole cup pictured here, I just poured in what I needed at the end and drank the rest. I am also using a store bought stock today (ran out of homemade stuff). I always go for the low sodium stuff. In this case a beef broth was used, you can use anything you like, chicken or vegetable are fine too.
3) Sauteing off the florets and then lightly steaming them with a little water at the end. Then they get set aside for later. As they get pan fried lightly I will just season with the tiniest amount of salt and pepper. You want to use the least amount of salt possible whilst still seasoning at each step. Keeping in mind that some cheeses have salt already.

The onion half gets diced finely and is sweated off. No need to brown it, just cook it until it is translucent.

1) A little vegetable oil, once it is hot. Add the onion.
2) As the onion starts to soften, add the broccoli stem pieces (cut them into uniform pieces so they cook evenly).
3) Later, add the garlic and season (salt, pepper and herbs).

No need to go crazy on the stock, just use a little. I used about a cup of stock. But depending on the amount of soup needed or the size of the broccoli head or numbers of broccoli heads used adjust as it is needed. Keeping in mind the other ingredients will need adjustments too.

1) Add the potato pieces, then add the stock and finally add some water to cover everything. Let it come to a boil and shimmer for about 20-25 minutes. Again keep in mind that each stove is different, don't just walk away for 25 minutes. Check it occasionally and stir it so you can judge and adjust.
2) Using a slotted spoon, scoop up the broccoli stem and potato pieces into a blender with some of the liquid. If you don't have a blender, cut up the stems and potatoes into finer pieces in the beginning and use a potato masher right in the pot.
3) Add the florets back in to the remaining liquid and steam them some more to allow them to cook all the way through.

Add only as much milk as you need. If you like a thinner soup then add more. However if your preference is a thicker soup, add only a little.

1) Pour the blender content back into the pot, add the milk as needed.
2) Time to add the cheese. Add a little at a time to let it melt and incorporate into the soup. Leaving a little for the final plating. Then heat through and season to taste.
3) Ladle into a bowl and sprinkle a little more cheese on top to finish.

Something good to go with the soup would be a nice crusty bread. Or even a piece of wholewheat toast.

I do that a lot in Scuba's soup threads.... Had to change my sweatshirt earlier.... :o I'd be embarrassed about the drool, but I have so many dogs around I can just blame it on them! :laughing:

Yep thats what i would do.even the mr here can drool real well when he sees food he knows he is going to get.so blame the pups.
