Tofu Tacos
 
If your a vegetarian and you miss being able to eat some of your fav things, or even just a health nut. Here is a good recipe for one of the things i miss the most after becoming a strict vegetarian. When i make them i dont use cheese.

INGREDIENTS (Nutrition)
1 (16 ounce) package garden herb tofu, crumbled
2 tablespoons vegetable oil
1 clove garlic, minced
1/2 cup chopped onion
2 teaspoons chili powder
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/2 lime, juiced
1/2 cup tomato sauce
1/4 cup chopped fresh cilantro
10 medium taco shells, heated
2 cups shredded lettuce
2 tomatoes, chopped
1 avocado - peeled, pitted and diced
1 cup shredded Cheddar cheese
1/4 cup salsa



DIRECTIONS
Over a medium heat fry the tofu, oil, garlic and onion in a large skillet for 5 minutes. Add the chili powder, paprika, cayenne, cumin, salt, lime juice and tomato sauce to the skillet and stir. Cook for 3 minutes. Stir in the cilantro. Spoon mixture in a serving bowl.
Spoon the tofu mixture into taco shells. Top the mixture with lettuce, tomatoes, avocado, Cheddar cheese and salsa.

Thai Curry Tofu
 
INGREDIENTS (Nutrition)
1 tablespoon canola oil
1 (12 ounce) package extra-firm tofu, drained and cubed
1 tablespoon seasoned salt, or to taste
1 tablespoon butter or margarine
1 small onion, chopped
3 cloves garlic, minced
1 (10 ounce) can coconut milk
2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped fresh cilantro



DIRECTIONS
Heat oil in a large skillet over medium-high heat. Add tofu cubes, season with seasoned salt and fry until golden on all sides, stirring occasionally, about 15 minutes. Remove to paper towels, and set aside.
Melt butter or margarine in the same skillet over medium heat. Add the onion and garlic; cook and stir until tender. Stir in coconut milk, curry powder, salt, pepper and cilantro. Return the tofu to the skillet. Simmer over low heat for 15 minutes, stirring occasionally.

Those sound very tasty! I love curry and taco's are yummy! I'd have to get some vegan cheese though to put on the tacos. I can't have a taco with no cheese. I found some vegan cheese the other day and tried it and it wasn't bad.

They are VERY tasty. Vegan Cheese is VERY hard to find around here, Finding Tofu was hard enough, But the cheese, Id have to search for the rest of my life to find some:sad:

I guess I'm lucky in that my market is beginning to stock a lot of things for vegetarians, and there are two Whole Food markets not far from where I live. I've even seen "meatless" ground beef.
