My mastiff is on raw full time now but won't eat the organs. What can I try as a substitute for the heart's, livers, and kidneys? So far I've been feeding him:
Chicken Leg Quarters
Whole Young Chickens
Raw Eggs (he won't eat the shells)
What am I missing for a complete diet?

I have one who won't eat organs. Try this: cut it into serving sizes, and freeze it on a cookie sheet, then feed it frozen. My organ-hater not only eats organs this way but LOVES it! I think it's a texture thing.

Bodhi isn't too keen on organ meat either, but when we chop it in small pieces and mix it in with ground beef, and add some freeze-dried liver (oddly enough Bodhi's favourite treat - she'll do anything for it!) she'll eat it.
She'll also more likely eat organs if we chop them into small pieces and sear them quickly in a pan (just the outside, so that the inside is still completely raw). I think it brings out the scent and makes it more likeable for her?
And Bodhi doesn't eat frozen meat of any kind - it needs to be room temperature for her. I don't know if you're presenting it in frozen or cold format, but if we do that, she won't eat it. If we put it in warm water to thaw fully and warm up to room temperature, she'll be more likely to eat it when we chop it up and mix it with muscle meat.

you might want to add other protein sources when you can. the organ meats are a must, so you'll have to figure away to get him to eat them. Personally the only thing I'd add is fish oil or actual fatty fish

You could definitely add more to the list. Pork chops, fish, duck... whatever you can find cheap at the supermarket. And you don't mention whether you're feeding veggies and fruit, or are adding omega oils (fish oil). And green tripe? Are you?
Our pup is 6 months old next month. She's had, so far, chicken, turkey, duck, beef, pork chops and pork ribs, waterbuffalo, buffalo, lamb, cod, halibut, salmon, sardines, tuna, mackerel, herring, and she's had cow and lamb tripe. She's had veggies and fruit, yoghurt, egg, cream cheese, cottage cheese. She gets bones in varying sizes, with varying amounts of muscle left on it. She's been eating raw for 3 months now.

Sounds like I need to add another protein source, I'm not doing any fruits or veggies and am only feeding my dog what's on my list.

dont' worry about the fruit/veg...we only feed them sporadically, when we think of it (or when I'm cleaning out the fridge). It's not an essential component of the diet. I think feeding green tripe is a good way to go if you want to feed veg...'cause unless you puree the heck out of whole veggies/fruits, dogs really don't have the digestive system to extract any nutrients from them...hence the tripe (it's pre-digested greens)

Scruff won't eat the organs either, even frozen or cut in bits and hidden in his food..he picks them out!
He eats freeze dried lungs and liver..are those good enough? Or does it have to be in fresh form to do him any good?
