The campground owners/friends where dh and Sandman were staying in NB were so sweet to think of picking a huge tub of wild blueberries :cloud9: for me.
Other than eating them as is and in smoothies, does anyone have any tried and tested blueberry recipes? I made blueberry/banana french toast this morning and the boys were not impressed :rolleyes:. Ingrates :frustrated:!

LP what about just boiling them down and putting then in jars! Oh! that would be so nice in the winter when your baking or even on ice cream! yummy love blueberries! Depending on how big the tub is you could be making lots of muffins!!
I would even just freeze them...if you know someone with one of the sealer machines that would work out perfect! just seal them and decide later what to do with them :thumbs up
Oh By the way I will come for that breakfast anytime!!!!

Ready in: < 30 minutes
recipe difficulty 1/5 Difficulty: 1 (1=easiest :: hardest=5)
Serves/Makes: 3 cups
4 cups Fresh or frozen blueberries
2 cups Sugar
3 ounces Lemon flavored gelatin
In large saucepan, combine all three ingredients. Bring to a boil. Cook and stir for 2 minutes.
Pour into jars; refrigerate.
usually if you just use straight blueberries in stuff they are kind of tart.

HOLY SUGAR!!! thats like the homemade jam recipes they call for a ton of sugar! Oh there you go LP you could make some blueberry jam!! nomnomnom!!!

I just had some of the french toast and it was great :shrug:. The boys would probably prefer the taste had I crumbled in some chips and Coke :rolleyes:.
Hmm, boiling some down sounds good. I don't know how to make muffins :o. I tried a few times in the past but they tasted :yuck:. Maybe I didn't have a good recipe?
I gave up on cooking a long time ago cuz the rest of the family is too darn picky (and I work with food so I don't really feel like seeing it when I get home :o). But I want to start again...at least with deserts and Sandman's lunches otherwise they don't really eat properly :o.

Honestly the easiest way for me is to boil them down...or freeze them!
I know what you mean about food though! We owned a pizzeria for 10 yrs so there was no real cooking in our house! never time! now that we are out of that I enjoy cooking more!

I know this thread is old, but you have to try this recipe. Its a baked french toast and its amazing!
Baked Blueberry French Toast
Adapted from Fabulous Fairholme: Breakfasts & Brunches Serves 2
4 slices day old Italian bread, cut into 1/2 inch cubes
1/2 cup fresh blueberries (or raspberries)
2 oz cream cheese, cut into 1/2 inch cubes
1 cup milk
2 Tablespoons maple syrup
The night before: Grease two 8 oz ramekins. Line bottom half with bread cubes. Cover with blueberries and cream cheese cubes and top with remaining bread. Mix eggs, milk and syrup together and pour over bread. Cover and let soak overnight in refrigerator.
In the morning: Preheat oven to 350F. (Make your coffee and wake yourself up) Bake for 25-30 minutes or until puffy and golden. Remove from ramekins and serve with your topping of choice and plenty more of that coffee.

I know this thread is old but I made this last weekend and it was a total hit.
1 sleeve of digestive biscuits, finely crushed. (about 27) (graham wafers would be a good substitute)
1 tsp. sugar
1/4 tsp. cinnamon
1/2 cup butter, melted
8 oz. cream cheese
1/2 cup sugar
1 tsp. vanilla
3 cups frozen blueberries
1/2 cup sugar
1/2 cup water
1 Tbsp. fresh lemon juice
4 tsp. cornstarch
1/2 cup cold water
2 cups whipping cream
2 Tbsp. sugar
3 digestive biscuits, crushed
To make crust: Mix ingredients together and pat lightly into a 9"x13" pan and bake at 350F for 10 minutes.
To make cheese layer: Mix ingredients together and spread over crust. Bake at 325F for 20 minutes.
To make blueberry layer: Combine blueberries, sugar, water and lemon juice in a saucepan and bring to a boil. Dissolve cornstarch in the cold water and add to the blueberry mixture. Stir until thickened and pour over baked cheese layer. Cool completely.
To make topping: Whip cream with sugar and spread on top of blueberry layer. Sprinkle with digestive biscuit crumbs and refrigerate until serving time. If you make this the night before - don't whip the cream until just before serving. Serves 10-12
