Carrot Roll

2 cups diced, cooked carrots
2 egg yolks
1/3 cup fresh dill (or 2 tsp dry)
1/3 cup flour (I used whole wheat)
3 tbsp light sour cream

place all in a food processor and puree. Transfer to large bowl.

4 egg whites
pinch of salt

beat stiff, fold gently into carrot mix.

Spoon the mix onto parchment paper placed on a jelly roll pan (or any other flat pan!) and sprayed with vegetable oil.

Bake for 12 minutes at 350F/180C, let cool for 5 minutes, then sprinkle with 1 ts bread crumbs (I still don't understand why)

Invert jelly roll pan onto a clean tea towel. Remove pan and gently remove paper (I used tin foil since I had no paper, works too). Sprinkle with 1 ts bread crumbs (again, why?)

Roll up carrot roll along short end of towel. Allow to cool completely.



In food processor, place

1/2 can artichoke hearts (I used 40gr cauliflower, because I had no artichokes)
1/2 cup 5% smooth ricotta (that I didn't find, used cottage cheese)
3 tbsp light sour cream
3 tbsp chopped green onions
1 1/2 tbsp grated parmesan cheese
1/2 tsp minced garlic

puree it all.

Unroll carrot roll, spread filling with a spatula and tightly re-roll. (I cheated, I spread it on while still just cool, and rolled it all just once!)

Serve at room temperature. Cut into 1-inch slices with a cerrated knife (or any knife, dipped in water to keep from sticking).

I've NEVER tried a roll before! My mom, who is a great cook and bakes any cake you can think of, always refused to do rolls because they're so har to make and crack. I think that by rolling it filled the first time (and not unrolling, filling, re-rolling) made it easier, but not really possible with a sponge cake w/cream filling :D then again, I don't make that anyway!

Now the question remains: is it as good as it looks? LOL. At least it looks like it did in the book!
