Does anyone know anything about "pea starch concentrate"? It's one of the carb sources in Horizon Legacy grain-free kibble.

I found this
Due to its naturally high content of amylose, the
pea starches can provide superior performance where strong
binding and gel forming is required. Applications: meat
processing, oriental noodles, fat-free dairy products, surimi
and frozen-fish applications.
Seems maybe it's a substitute for corn starch the way this is worded.

I think it should be safe. Chinese people especially in northeastern part of China use it as a main ingredient for many of their cuisines.
