My dog pulled a turkey breast carcass from the trash and ate it overnight on Sunday. On Monday, she was moving slow, and eating only dog biscuits. However, she went outside regularly. My husband said her evening bm was smaller than usual. What should we be looking for as far as serious symptoms are concerned?

Is she vomiting or having diarrhea? Does she want to eat & drink normally?
If she's pooping at all, that indicates she's not impacted, or not completely impacted. I imagine after two days unless she's acting quite ill or depressed, she'll be fine. If she's otherwise generally OK, I'd give her some boiled mushy rice with oil (can use sardines or cooked meat mixed in the get her to eat it.) This will help pass everything through if she's a bit constipated.
If she's still not her normal self now, I'd take her to the vet for xrays. Cooked bones can splinter & perforate the intestine, which can be fatal if not treated.
