Carrot Cake

I need a GOOD easy recipe for carrot cake.

My friend requested it for her wedding cake, and I have no good carrot cake recipes (even though it is my fav cake!).

I used to use one of my mom's that had lots of grated carrot, nutmeg, mace, cinnamon, and a can of crushed pineapple. I see a lot of recipes with huge amounts of oil which I want to avoid (substitute with apple sauce).

Anyone have a good old fashioned family recipe they want to share? I plant to make a few "trial" recipes for this weeked which is her wedding/baby shower (she is also pregnant, and moving back to scotland after the wedding, so we are doing an early baby shower). I was going to make a bunch of cupcakes of several recipes (maybe 3) and see which ones people like best and use that in the wedding cake.

I make one from scratch and no recipe it's all in my head.

I will actually be making it this weekend if you want to come watch LMFHO!!

Seriously I may make it this weekend you got me hungry for it...so if I DO then I will definitely make an effort to recall what I put in and how much.

I use a whole wheat flour, walnuts, unsweetened applesauce, honey, no over powering spices just a little cinnamon. I make a cream cheese frosting which is absolutely yummiable and I put lemon zest in the frosting.

Ok I promise if I make it this weekend in between work then I'll post the recipe.

Sometimes, I put whole cranberries in it...but just a few for the odd tangy bite. Can also use the same recipe for muffins :D YUM
