Keep his leash on him, even indoors. Until a dog is trustworthy, it should not be left alone, or have the ability to run away and hide to do something. With a leash on, he'll not have the opportunity to go chew the couch.
(on a side note: some dogs don't dislike the taste of bitter apple. Try vinegar)

It sounds like it is the new couch specifically that is attracting Simba.
Maybe try putting a towel, or sheet on the sofa that smells like Simba (rub him well with the towel or sheet first). That might compensate for whatever smell is attracting him to the new sofa. When I first got my second dog, he peed on my bed because I made the mistake of putting a blanket on the bed that smelled only of my first dog. Once I washed that blanket with my second dog's blanket, all was fine. He just needed his scent to be there too.
Simba might need to be gated in another room or crated when you are not home.

You could booby trap the couch. Have a can of pennies drop on the hard floor or set off a loud noise like a party fog horn everytime he comes near the couch. Or use a water bottle and spray him whenever he gets near the couch. I've hard that the smell of vicks vaporub or tiger balm also works when applied to surfaces to prevent chewing.
The point is whatever pleasure he is getting out of chewing the couch needs to be replaced with very unpleasant deterrants.
